Veg'd Out Taco Meat Filling with Riced Cauliflower

Volumize your taco meat filling by adding in some riced cauliflower! No one will ever no!

INGREDIENTS

1/2 lb Extra lean ground meat OR veggie ground such as Gardein

2 cups Riced cauliflower

1/2 cup Red bell pepper, finely chopped

1/4 cup Green onions, finely chopped

1/4 tsp Sea salt

2 tsp Garlic powder

2 tsp Ground cumin

2 tsp Smoked paprika


PROCEDURE

  1. Heat a non-stick skillet over medium heat. Once hot, add in the ground meat and cook for 5 minutes, breaking the meat apart with the back of a spatula. Add in the cauliflower and spices and cook for another 5 minutes or until the meat is completely cooked. Remove from heat and add in the green onions and bell pepper.
  2. Serve the meat filling with corn tortillas or on top of a bed of salad.
