Creamy Herbaceous Avocado Dip

A twist on the classic guacamole!
INGREDIENTS (makes 4 servings)
1 large perfectly ripe avocado (Hass variety is preferable)
1 each Lemon, zested and juiced
2 cloves Garlic, peeled and smashed
1/2 cup Assortment of fresh herbs (scallions, oregano, basil, parsley, cilantro, mint)
1/4 tsp Red Pepper Flakes
1/2 tsp Salt
PROCEDURE
- Combine all ingredients in a blender and pulse until smooth. Serve with vegetable crudites, spread on toast, smother over grilled tofu and vegetables, accompany barbecued steak, or use as a chip dip!
A delicious plant-based one-pot meal.
