Hummus Encrusted Chicken Breast with Roasted Vegetables

Bored of the usual spice rub? Try this simple yet versatile recipe out!

INGREDIENTS (makes 4 servings)
4 Boneless skinless chicken breast
4 cups
 Vegetables of your choice (broccoli, zucchini, asparagus, green beans, cauliflower)
1
 Red onion, julienned
1 tbsp
 Extra virgin olive oil
1/2 cup
 Store-bought hummus, any flavour*
1/2 tsp
 each Sea salt & freshly cracked black pepper
1 tbsp
 Garlic powder
*Select any flavoured hummus of your choice. Roasted Garlic and Jalapeno are my favourite!


PROCEDURE

  1. Pat dry and season the chicken breasts generously with salt and pepper. Marinate for 30 minutes.
  2. Preheat oven to 400F. In a large baking tray, combine vegetables and olive oil and toss until combined. Season with salt, pepper and garlic powder. In a second baking tray, place the chicken breasts on top and cover each breast with 2 tbsp hummus. Bake for 25 minutes and the 5 minutes on broil. Let the chicken rest for 5 minutes before carving
