Hummus Encrusted Chicken Breast with Roasted Vegetables

Bored of the usual spice rub? Try this simple yet versatile recipe out!
INGREDIENTS
(makes 4 servings)
4 Boneless skinless chicken breast
4 cups Vegetables of your choice (broccoli, zucchini, asparagus, green beans, cauliflower)
1 Red onion, julienned
1 tbsp Extra virgin olive oil
1/2 cup Store-bought hummus, any flavour*
1/2 tsp each Sea salt & freshly cracked black pepper
1 tbsp Garlic powder
*Select any flavoured hummus of your choice. Roasted Garlic and Jalapeno are my favourite!
PROCEDURE
- Pat dry and season the chicken breasts generously with salt and pepper. Marinate for 30 minutes.
- Preheat oven to 400F. In a large baking tray, combine vegetables and olive oil and toss until combined. Season with salt, pepper and garlic powder. In a second baking tray, place the chicken breasts on top and cover each breast with 2 tbsp hummus. Bake for 25 minutes and the 5 minutes on broil. Let the chicken rest for 5 minutes before carving
