Curried Cauliflower

When buying cauliflower, look for thick compact heads of creamy white florets. The head should be heavy for its size and the leaves surrounding it should be bright green and not be showing signs of wilting.

INGREDIENTS

1 head cauliflower, trimmed and cut into florets
1 tbsp olive oil
1 small cooking onion, finely diced
2 tsp curry powder
1/4 cup finely chopped fresh cilantro


PROCEDURE

  1. Preheat a large skillet over medium heat. Add oil and onion, and cook until golden and slightly translucent, about 2 minutes. Stir in the curry powder and cauliflower and toss until evenly coated.
  2. Cook until tender, adding a splash of water as needed, about 5-6 minutes. Season with salt and freshly ground pepper to taste. Remove from heat and garnish with cilantro if desired.
