Homemade Chocolate Soy Milk

Creamy, silky and oh so simple to make!
INGREDIENTS (makes 2 cups)
2 cups pre-soaked organic soybeans (measured after soaking overnight)
4 cups water
5-8 pitted dates
1 tbsp cocoa powder
1/4 tsp vanilla bean powder (or pure vanilla extract)
PROCEDURE
- Combine pre-soaked soybeans with water, dates, cocoa powder and vanilla. Blend on high until smooth. Place a fine mesh strainer over a large pot and strain the milk. The pulp can be saved and used as fertilizer!
- Simmer the milk over low heat for 20 minutes, carefully skimming off the foamy layer on top. Strain once more and transfer to a glass jar. Store in the fridge for up to 3 days.
A delicious plant-based one-pot meal.
