Homemade Chocolate Soy Milk

Creamy, silky and oh so simple to make! 

INGREDIENTS (makes 2 cups)

2 cups pre-soaked organic soybeans (measured after soaking overnight)

4 cups water

5-8 pitted dates 

1 tbsp cocoa powder

1/4 tsp vanilla bean powder (or pure vanilla extract)


PROCEDURE

  1. Combine pre-soaked soybeans with water, dates, cocoa powder and vanilla. Blend on high until smooth. Place a fine mesh strainer over a large pot and strain the milk. The pulp can be saved and used as fertilizer!
  2. Simmer the milk over low heat for 20 minutes, carefully skimming off the foamy layer on top. Strain once more and transfer to a glass jar. Store in the fridge for up to 3 days.
