INGREDIENTS (makes 4 servings)
1 cup split red lentils, rinsed and drained well
2 cups water
pinch salt
PROCEDURE
1) Combine the rinsed lentils and water in a medium bowl and let it sit overnight. The next morning, pour the entire contents of bowl to a blender along with salt, and puree until smooth and creamy. No lumps!
2) Heat a nonstick skillet to medium heat. Once warm, add 1/4 cup (60 mL) of batter to the center of the pan. Using the back of a spoon, spread the batter into a 6-inch circle.
3) Cook for 3-4 minutes until surface of tortilla appears dry. Slide a spatula underneath and flip. Cook about 1 minute longer to brown other side. Transfer to cooling rack and cool completely. Repeat with the remaining batter. Serve with chia jam, almond butter, or cream cheese!
