Romanesco Broccoli, otherwise known as Roman Cauliflower is quite a remarkable neon green creature! Stun your dinner guests by serving it like a slice of cake!
Romanesco Broccoli, stem and leaves
2 tbsp Olive oil
2 cloves Garlic, finely zested
1 large Lemon, juiced and zested
½ tsp Fresh thyme, finely minced
To taste Sea salt and freshly cracked black pepper
⅓ cup Mayonnaise
Preheat oven to 400F and line a baking tray with parchment paper. In a small bowl, whisk together the olive oil, half of the garlic, half of the lemon zest and juice, thyme, salt and pepper. Pour the mixture over the head of Romanesco and gently coat the entire vegetable. Roast for 30-35 minutes, or until golden and softened.
Meanwhile, in a small bowl, whisk together the remaining garlic, lemon zest, juice, and mayonnaise. Season with salt and pepper and set aside. Once the Romanesco is golden brown, remove from oven and slice like a cake into generous wedges. Serve with a dollop of the garlic mayonnaise.
