Roasted Cruciferous Vegetable Medley - 2 Ways

One of my favourite cooking methods to meal prep my vegetables.


1 head Cauliflower, cut into bite-sized florets
1 lb Brussel sprouts, ends trimmed
2 crowns Broccoli, cut into bite-sized florets

Sweet and Smoky Marinade
1 ½ tbsp Maple syrup
1 tbsp Maple vinegar or apple cider vinegar
1 tbsp Sweet and smoky mustard
1 tbsp Avocado oil
To taste Sea salt and pepper

Sesame Marinade
2 tbsp Sesame oil
2 tbsp Rice vinegar
1 tbsp Frozen Garlic puck recipe
To taste Sea salt and pepper


Step 1

Preheat oven to 400F and line 2 baking trays with parchment paper. Thoroughly wash all the vegetables and shake off any excess water.

Step 2

Divide the vegetables in half and transfer into two large bowls. Add the ingredients for the sweet and smoky marinade in one bowl, and the sesame marinade into the second bowl. Toss to combine and transfer onto the baking sheets. Bake for 25-30 minutes until vegetables are golden, rotating the pans halfway for even heat distribution.
