Lemongrass Sriracha Baked Edamame

Lightly salted edamame is good… but these are way better!

3 cups Edamame (if frozen, defrost)
1 tbsp coconut oil, melted  
1 tbsp dried or freshly grated lemongrass
2 tsp sriracha

PROCEDURE

Step 1
Lightly salted edamame is good… but these are way better!

Step 2
Place the edamame on the baking tray and drizzle with the coconut oil mixture. Gently toss and bake for 20 minutes. Serve warm as an appetizer, afternoon snack or side dish!
