Lemon Coconut Pick-Me Up Bites

Just when you thought you did not have anything to perk you up, you remembered you made these delicious lemon coconut pick-me up bites!

500g Golden Valley Date Paste, diced into ½-inch piecesǂ
½ cup Organic pumpkin seed protein powder
1/3 cup  Whole Chia seeds
1 Lemon, zested*
½ Lemon, juiced*
½ cup Unsweetened finely shredded coconut

ǂTo make date paste, pulverize 500g of pitted dates in a food processor!
*Can be substituted with 1 ½ tsp pure lemon extract


Step 1

In a large bowl, combine the date paste, pumpkin protein, chia seeds, lemon zest and juice. Using your hands, knead the dry ingredients into the date paste. Pretend you are kneading bread!

Step 2

Place the coconut into a shallow dish. Scoop 1 tablespoon of date mixture and gently roll between the palm of your hands to form a uniform sphere. Coat with coconut and place onto mini paper liners. Repeat with the remaining mixture. Pick-me up bites can be frozen for up to 1 month and eaten as a pre or post-workout snack.
