Crunchy Chocolate Protein Bar

A simple protein bar that is perfect for your lunchbox, to accompany your mid-afternoon tea, or for an evening dessert! With only 4 ingredients, it is hard not to want to make these scrumptious bites!

1kg  Golden Valley Date Paste, diced into ½-inch pieces*
3/4 cup Organic pumpkin seed protein powder*
1/2 cup Raw cocoa powder
1-3 tbsp  ´╗┐Water, or as needed
1 1/2 cups  Organic Gluten-Free Rice Crispy Cereal

*To make date paste, pulverize 1kg of pitted dates in a food processor!


Step 1

In a large bowl, combine the date paste, pumpkin protein, cocoa powder, and water. Using your hands, knead the dry ingredients into the date paste. Pretend you are kneading bread!

Step 2

Line a square baking pan with plastic wrap. Sprinkle with the rice cereal so it coats the bottom of the pan. Distribute half of the date paste mixture on top of the rice cereal. Lay a piece of plastic wrap on top and using the back of a spatula, press down the date mixture so it coats the entire pan. Repeat this step once more, to form a second layer.

Sprinkle the remaining rice cereal on top and press them down with the back of your spatula. Place the tray in the freezer for one hour to let the bars set, before cutting into squares. These protein squares can be frozen for up to 1 month and eaten right out of the freezer or at room temperature!
