6-Ingredient Cinnamon Cookie

The best recipes are ones that have few ingredients and let them truly shine. No dairy, eggs or flour required!

INGREDIENTS (makes 1 dozen

  1. ½ cup medjool dates, pitted
  2. 1 cup creamy natural almond butter or sunflower seed butter
  3. 1 tbsp ground flax
  4. 1 tbsp ground cinnamon  
  5. ¼ tsp baking soda
  6. ¼ tsp sea salt

PROCEDURE

Step 1

Preheat oven to 350oF and line a baking sheet with parchment paper. Place all  ingredients into a food processor or in a high-powered blender.   Process until combined and smooth. The dough will be slightly oily, but don’t worry about!  

Step 2

At this point, you can feel free to add in a few tablespoons of mini chocolate chips! I like using the “Enjoy Life” brand because they are vegan and soy-free. Using a small ice cream scoop, divide dough, roll into balls and place on the baking sheet. Bake for 12-15 minutes and wait for 5 minutes before transferring the cookies onto a wire rack to cool completely.
