Dairy-Free Coconut Egg Nog (I used
the So Delicious Brand)*
1 ½ tbsp Organic gelatin (I used the GoBIO! Brand)
2 tbsp Water
¼ cup Pomegranates (optional garnish)
*Can be substituted with 2 cups of non-dairy
sweetened almond, cashew, rice, or soy milk. Feel free to add in your own
flavourings such as vanilla bean, cinnamon stick, orange rind, etc.
Bloom the gelatin by combining it in small bowl with the water. Set aside.
Meanwhile, in a saucepan over medium heat, bring the coconut beverage to a boil. Reduce the heat to low and whisk in the bloomed gelatin. Once the gelatin has fully dissolved, remove from heat and carefully pour into your moulding dishes. Chill until set, about 3-4 hours. Garnish with pomegranates or other fruit before enjoying.
