Cinnamon Roasted Sweet Potato Wedges

An effortless recipe that requires just a splash of oil and a pinch of cinnamon turning the humble sweet potato into a delicious homemade wedge.


2 large sweet potatoes, scrubbed and cleaned
1 ½ tbsp olive oil 
1 tsp ground cinnamon
1 tsp sea salt
¼ tsp freshly cracked black pepper


Step 1

Preheat the oven to 400F and line a baking tray with parchment paper. Cut each potato in half lengthwise, then cut each half lengthwise again, and then each piece in half again so you end up with 8 wedges. Repeat with the second sweet potato. Transfer the cut wedges onto the baking tray.  Drizzle olive oil over the potato wedges and season with cinnamon, salt and pepper. Toss to coat and spread the potatoes in an even layer on the baking tray.

Step 2

Roast the potatoes until tender, about 20-25 minutes. Remove from the oven and enjoy warm. Transform any leftover wedges into sweet potato mash. To reheat the mash, just place under the broiler for 5 minutes.
