Cauliflower Fried Rice

This simple one-skillet dish combines cauliflower and minced meat with ginger, garlic and Thai basil for an easy low-carb Asian inspired dinner.

1 head cauliflower, cut into florets, washed and dried
1 lb ground turkey (or pork)
1 cup onion, small dice
1 cup green peas
½ cup carrots, small dice
2-inch piece gingerroot, peeled and grated*
2 cloves garlic   finely minced
½ cup Thai basil leaves, roughly chopped
To taste sea salt & freshly cracked black pepper

*A frozen piece of gingerroot is the easiest to grate using a microplane zester!

PROCEDURE

Step 1


Place a handful of cauliflower florets into a food processor or Vitamix® and pulse for about 10 seconds, until it resembles fine grains of rice. Repeat with remaining florets.
Step 2
Heat a large skillet over medium heat and add the ground turkey. Using a wooden spoon, break apart the meat and cook a few minutes until it begins to brown.
Step 3
Push the ground meat to one side of the pan and add the onions and garlic. Season with salt and pepper and cook for 1 minute. Add the ginger, peas, carrots and cauliflower then cook, stirring frequently, for about 5 minutes.
Step 4
Remove from heat and stir in the Thai basil. Transfer to a bowl and enjoy warm.
