Caramelized Onion Cream Sauce with Vegetable Noodles

A faux “fettucine alfredo” that you can feel great about eating.

INGREDIENTS 

2 tbsp avocado or olive oil
2 cups diced cooking onions
½ tsp sea salt
1 clove garlic, finely minced
2 tbsp broth or water
1 tbsp apple cider vinegar
1 tbsp Dijon mustard 
2-3 cucumbers, zucchinis or carrots to taste
sea salt & freshly cracked black pepper

PROCEDURE

Step 1

Heat a large pan over medium heat. Once the pan is hot, add the oil, onions and salt. Cook the onions until caramelized, stirring frequently until they are golden-brown all over and completely limp, reducing the heat to medium-low heat after the first 5 minutes. This entire process will take approximately 15-20 minutes.

Step 2

Meanwhile, spiralize your vegetable of choice into beautiful strands of noodles.

Step 3
Once the onions are nicely caramelized and golden, add the garlic and continue cooking for 2 minutes.

Step 4

Remove from heat, and carefully transfer the onion mixture into a blender. Add in the broth, apple cider vinegar and mustard, and puree until smooth. Pour the sauce over your vegetable noodles and gently toss. Season to taste with salt and pepper.
