Avocado Chickpea Banh Mi Sandwich

A quick and easy lunch option, perfect for summer picnics.

INGREDIENTS

1-15oz can chickpeas, rinsed and drained
1 large perfectly ripe avocado
2 tbsp freshly squeezed lime juice
1/3 cup ´╗┐fresh cilantro, chopped
2 tbsp scallions aka green onions, finely chopped
½ tsp chili powder
to taste sea salt and freshly ground black pepper
½ cup carrots, grated
4 leaves green leaf or bibb lettuce 
your choice of a bun, rice cake, or lettuce wraps

PROCEDURE

Step 1
In a medium bowl combine chickpeas, avocado and lime juice together. Using a potato masher, mash the ingredients until somewhat smooth but still slightly chunky. Add in cilantro and scallions. Season with chili powder, salt and pepper.

Step 2
Spread chickpea mixture on bread or crackers, and top with grated carrot and lettuce.
