INGREDIENTS (makes 3-4 servings)
2 lb Pork Tenderloin (or 4 skinless boneless chicken breasts)
1/4 cup Hummus
Sea salt and
freshly cracked black pepper
**Select any flavoured hummus of your choice. Roasted Garlic and Jalapeno are my favourite!
Liberally salt your pork tenderloin and let it marinate for 1 hour or overnight. When ready to cook, preheat oven to 400oF and line a baking sheet with parchment paper.
Place the pork onto the baking sheet and using a spoon, coat the pork with hummus. Bake for 25 minutes. Let the pork sit for 10 minutes before slicing to retain juices.
