An easy go-to weeknight entrée that is sure to be a household staple!
ground forage-raised pork
1 lb green beans, ends trimmed
1 red onion, thinly sliced
1-inch gingerroot, peeled and finely grated
2 cloves garlic, finely grated
1 tbsp fish sauce or soy sauce
1 tbsp maple syrup
Heat a large skillet over medium heat and add the ground pork. Using a wooden spoon, break apart the meat and cook a few minutes until it begins to brown but not fully cooked, about 3-4 minutes. Transfer to a bowl and set aside.
Add in the onions and sauté for 2 minutes, tossing continuously. Stir in the ginger, garlic and beans, and stir-fry for 2-3 minutes.
Return the pork back into the skillet and stir in the fish sauce and maple syrup. Cover the skillet with a tight-fitting lid and cook for 4-5 minutes until the beans have softened. Transfer onto a serving platter and garnish with sesame seeds and scallions if desired.
